✨SAVORY LENTIL PANCAKES✨ One of my favorite hi ✨SAVORY LENTIL PANCAKES✨ One of my favorite high-protein breakfast 🤤 and yes, you can use brown lentils if that's what you have. Excellent and easy breakfast/brunch/dinner. You'll need:

✅ Red lentils (soaked from the night before and rinsed before using)
✅Filtered water (just enough to cover the lentils, to blend)
✅ 1 egg
✅ Salt, pepper and garlic powder to taste.

Blend the lentils with water, add the seasonings and the egg. Mix very well. Cook on a hot skillet. When bubbles appear in the surface (like in the video) you can add some cheese, fold and flip. Cook on the other side for about 2 minutes, or until the cheese is melted, and enjoy. Such a satisfying meal. Try it and let me know what you think.

If you don't have a non-stick pan you might need to very lightly oil the pan (you can use a brush and then a napkin to remove the excess). If you have a non-stick skillet you can probably skip the oil. Just try with a small one first and see how that works.

Beautiful scenery from el Morro in Montecristi, Do Beautiful scenery from el Morro in Montecristi, Dominican Republic. I knew this was a dry area, so I wasn't expecting a lot of heat (Montecristi is actually called "la ciudad del sol" The Sun City), I wasn't expecting the strong wind, though. Our food was almost flying because of it, so it was a struggle to eat 😅 But the view... Oh the view 🤩🤩 Breathtaking 🤓 This is a nice place to spend the evening. It has sitting areas, a path to go down to the beach and restrooms. @ambienterd ¡El Morro si es chulo!

✨EASY VEGAN DINNER ROLLS✨ for the morning coff ✨EASY VEGAN DINNER ROLLS✨ for the morning coffee, brunch, snack, dinner, craving....you know the drill 😁.

Ingredients
400gr bread flour (12% protein)
180 to 200 ml water, room temperature
50ml oil (vegetable, olive, coconut) OR use 60 gr of vegan butter for baking (82% fat) or butter, if not vegan. 
7gr salt
50gr sugar
5gr instant yeast

- Mix all of the ingredients well and form a ball. 
- Knead the dough for about 10 mins (5-7 mins if using stand mixer) or until the dough is smooth and all ingredients are well incorporated. 
- Bulk fermentation until doubled in size.
- Divide the dough into 12 portions (mine were approx. 60gr) 
- Shape and place the dinner rolls on a baking tray with baking paper. 
- Second fermentation until the rolls are almost double in size. Meanwhile preheat your oven to 180°C (350°F)
- Bake for 20-25 mins or until lightly golden on top.

✨CLASSIC HAMANTASCHEN✨ . . You'll need: 400 gr ✨CLASSIC HAMANTASCHEN✨

You'll need:
400 gr Self-Rising Flour* + 50g almond flour (or you can use 450g of SR flour) 
130 gr Granulated sugar
125 gr Eggs
100 gr oil (vegetable or coconut)
1/2 tsp Vanilla extract
1/4 tsp Salt

In a bowl mix eggs, sugar, oil, vanilla extract. Add the dry ingredients (flour, salt) and mix well until no dry flour remains. 
.
Roll out the dough between 2 parchment papers and cut with a cookie cutter of your desired size. Place your preferred jam in the center, then fold as shown in the video to achieve a triangular shape.
Carefully place the parchment with the shaped cookies over a baking sheet and bake in a preheated oven at180°C (350°F) for aprox. 12-15 minutes or until the bottom is light golden brown. Let them rest for about 5 minutes on the baking sheet and then transfer to a wire rack to cool completely if you really can wait lol (I couldn't!)

NOTES

If you don't have self-raising flour you can make it by mixing the amount of All-Purpose with 1 1/2 (one and a half) teaspoon of baking powder. Mix well and sift a couple of times for even distribution of the baking powder.

✨VEGGIE CANNELLONI✨ An idea to use that bit o ✨VEGGIE CANNELLONI✨ 
An idea to use that bit of broccoli 🥦 and carrots🥕sitting in the fridge, when you want more than soup and salad ✌🏻. Vegan, versatile and easy to make. Don't want the extra work of cannelloni? Mix in some rigatoni or macaroni instead 🙃

For this I used: 
🥕Grated carrots 
🥦Chopped broccoli 
🧂Seasonings (I used dried herbs, salt, black pepper and garlic powder)
⚪2 Tbsp of Corn starch to bind the veggies together. 
🍅Homemade tomato sauce

.
Add about a 1/4 cup of tomato sauce to the bottom of the baking dish. Arrange the cannelloni. Add the remaining tomato sauce. Cover with aluminum foil and bake at 200°C for about 30-35 minutes. Serve and enjoy!!

Munching through the week these super crunchy and perfectly roasted chickpeas 🤩🤩 Do you want to know the secret to crunchiest chickpeas? Roast the raw soaked chickpeas instead of the cooked ones.

Ingredients 
✳️ Dried chickpeas*, rehydrated for 12 hrs or overnight.
✳️ 2 Tbsp olive oil
✳️ Generous pinch of salt 
✳️ Generous pinch of Za'atar or the spice blend of your choice 
.

Instructions:
*Add as much rehydrated chickpeas as you want that fit in the baking sheet in 1 layer, and keeping in mind that ✨Roasted chickpeas are better eaten fresh✨ This time I used 1½ cup dried chickpeas✨

Preheat your oven to 400°F (200°C).
Thoroughly rinse and then dry the chickpeas using a kitchen towel or paper towels. Mix the chickpeas, salt, spice blend and olive oil in a baking sheet or baking pan and make sure the chickpeas are evenly coated. Spread very well in a single layer on the baking sheet. Roast in the preheated oven for 40 minutes, or until the chickpeas are golden brown and crunchy. Stir the chickpeas halfway through the cooking process for even roasting.
