✨12 VEGGIES SOUP✨ Still got some time to enjoy ✨12 VEGGIES SOUP✨ Still got some time to enjoy soups before the heat of summer ✌🏻

The veggies I sauteed in specific order: ✨First, onions until golden. Second, the garlic. Be careful not to burn it. 
✨After that, mushroom finely chopped, until well brown and fragrant. Then, the rest of the veggies, also finely chopped: 
✨Potatoes
✨Carrots
✨Broccoli - including stalk and leaves
✨cauliflower - including stalk and leaves
✨Zuchinni
✨Corn
✨Green beans
✨Celery

Once everything is taking in the color and all smells amazing, you add your veggie stock or plain water, salt, pepper, turmeric (is a must!) and a piece of fresh ginger (yes! Ginger in soup is delicious!!) And, ✨white beans, which are obviously not a veggie, but oh well! 😜

I also added a couple tablespoons of Israeli couscous (because I thought it would look cute 😁) and it kinda does 😜 Do you agree? 😁 What else will you add to this soup? 🤷🏻‍♀️🙅🏻‍♀️ Let me know in the comments!!

✨EASY VEGAN CARROT CAKE✨ 200g All Purpose Flou ✨EASY VEGAN CARROT CAKE✨
200g All Purpose Flour
100g Sugar (brown, white or a mixture of both) 
120 ml Plant-based milk (I used almond) 
35 ml Oil (vegetable oil, refined coconut oil, or light olive oil) 
1tsp Baking Powder
1/2tsp Baking Soda
1/2tsp Cinnamon Powder
1/4tsp Salt
100 gr Carrots, coarsely grated

Preheat your oven to 180°C (350°F). 
.
Mix wet ingredients with spices, fold in the dry ingredients into the wet. Finally mix in the grated carrots. Pour in a loaf pan (my loaf pan is 25x11x10 cm; which is about 9.5x4x4 inches) and bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely (preferably in a wire rack) before serving.

Burger, Israeli style 😁 Kebab Burger by @kebaba Burger, Israeli style 😁 Kebab Burger by @kebabandbro made with Challah bread, the most delicious kebab, caramelized onions, eggplants...and well, something red that I haven't figured out if it was tomatoes or peppers 🤪 served with the classic chopped salad, tahini sauce, potatoes and pickled cabbage. There was also what it seemed to me like pickled onion paste on the side of the tahini sauce, that was de-li-cious! Can't figure out exactly what it is but I hope to replicate this at home somehow, because it added such a nice kick to the burger. The explosion of flavors and textures on this burger was amazing! Such a nice little place, with great food and nice service. The star from the trip so far 👀🤩

Ingredients:
1 Tbsp extra virgin olive oil
1 onion
1 Tbsp of minced garlic
8 ounces of spinach, roughly chopped
1 c of artichokes, drained and chopped
1 c unsalted cashews, soaked overnight and drained
1/4 c almond milk or water
1/4 c vegan mayo (I make my vegan mayo by blending/whipping same amount of soy milk and oil (it could be vegetable oil or light olive oil)
Salt and pepper to taste

Preparation:
Sautee the chopped onion with the extra virgin olive oil, until lightly brown and fragrant.
.
Add the minced garlic, and cook on low until translucent. BE CAREFUL not to burn the garlic or it will be bitter.
. 
Add the chopped spinach and artichoke and continue cooking on medium low until all the liquid is evaporated (you want the spinach to look almost like a paste).
.
While this is cooking, blend the drained cashews. Add some liquid, like plant-based milk, if you need to. 
.
Add the cashew cream to the veggies. Transfer the mixture to a baking dish and bake @ 350°F for 10-15 min. You can add some vegan cheese if you want to, but this is great just like this.

Enjoy with your favorite chips, and veggies.
